It started with a menu

As a child, long before I could appreciate what was actually on the plate, I was fascinated by restaurant menus. The names of the dishes, the descriptions, the promise of something new. While other kids were restless waiting for their food, I was reading every line. That curiosity never left me.

Growing up in Istanbul, a city that stretches across two continents and has been feeding the world for centuries, food was never just fuel. It was culture, history, identity. The Grand Bazaar alone is an education in what it means for a place to have its own flavour. I still think about a bowl of meatballs from a small stall tucked inside that bazaar, simple, honest, perfect. No Michelin star, no Instagram moment. Just the real thing.

Every country does it differently

When I started travelling across Europe, I realised something that no guidebook had prepared me for: food is a window into a culture more revealing than any museum. The way Parisians treat a bistro lunch. The ritual of tapas in Madrid. The Roman obsession with getting the pasta exactly right. The Danes' quiet confidence in their ingredients. Each city I visited, Paris, Madrid, Rome, Milan, London, Berlin, Copenhagen, had its own philosophy about what a good meal should be.

That discovery became an obsession. Not just eating, but understanding. Why does this dish exist here? What does this market tell me about this city? Who are the people cooking this food, and what is their story?
